The power of pairing chocolate with spirits is something best appreciated through direct experience. Back by popular demand, this seminar takes a hands-on and methodical approach to the enticing subject. First, Hodie Rondeau of Vancouver’s Xoxolat leads a tasting of pure cocoa to show the subtle flavours usually obscured by excessive sweetening in commercial candy bars. Then Kelly Ann Woods leads a tasting of raw spirits. Finally, guests sample a range of chocolates from Xoxolat matched with cocktails that will shift their tastebuds into overdrive. Guests will also learn the basics of making mixed drinks necessary to pursue further study in the growing field.
